Menu Sunday

My five meal plan for the week was foiled, but here are the survivors...

This repeat is healthier and tastier than takeout... Modifications: I used flatiron steak instead of flank and broccoli instead of snow peas; added sesame seeds as a garnish and totally forgot to add the scallions.

Pinto, Tortellini, and Kale Soup

Tortellini, Pinto & Kale Soup
This was delicious and filling, yet light.  Perfect for Texas Fall evenings.  Modifications: I only used about 40 oz of chicken broth + 15 oz can of tomatoes.  I chose pinto beans,  added them {after soaking for 8 hours} to the broth after the 2nd step, and allowed them to cook that way for an hour or so before finishing the soup.
